Ingredients

Ingredients to prepare a dish that celebrates Apulian cuisine:

  • 500g of seasonal turnip tops
  • 300g of fresh or artisanal orecchiette
  • 50g grated Pecorino Romano
  • 2 cloves of garlic
  • 1 fresh chili pepper
  • Toasted bread crumbs (optional)
  • Extra virgin olive oil from Puglia
  • Salt and pepper to taste

For the pecorino mousse:

  • 200ml whole milk
  • 50g of Pecorino Romano
  • 30g butter
  • 30g of 00 flour

Preparation

  1. Prepare the turnip tops by removing the hardest parts and rinse them thoroughly.
  2. Cook the orecchiette in plenty of salted water. Keep a ladle of cooking water aside.
  3. In a pan, brown garlic and chili pepper in extra virgin olive oil. Add the turnip tops and cook until soft.
  4. For the mousse, prepare a roux with butter and flour, add the hot milk and pecorino, mixing until you obtain a smooth cream.
  5. Add the orecchiette to the dressing and finish with the pecorino mousse.

Tips for a Perfect Dish
