Amberjack Tartare with Extra Virgin Olive Oil and Apulian Taralli

Ingredients for the Tartare (for 2 people)
- 200g of frozen amberjack
- 3-4 fresh cherry tomatoes
- 1/4 red onion
- 40g of stracciatella
- Pugghia extra virgin olive oil , to taste
- Apulian taralli with onion to crumble on the surface
- Salt and pepper to taste
- Garlic powder (optional)
Preparation
1. Prepare the chopped tomatoes and onion
Chop the cherry tomatoes together with the red onion . Put the chopped mixture in a colander, add a pinch of salt and let the excess liquid drain for about 30 minutes.
2. Amberjack tartare
Meanwhile, dice the frozen amberjack and season it with Pugghia extra virgin olive oil , salt, pepper and a pinch of garlic powder if desired.
3. Composition of the Tartare
Using a pastry cutter, alternate a layer of amberjack with the chopped cherry tomatoes and onion. Add a drizzle of extra virgin olive oil and finish with the stracciatella.
