Spaghetti all'Assassina Gourmet with Stracciatella and Pistachio
This exclusive recipe, created by I Piatti di Crecida , revisits the classic Apulian dish of Spaghetti all'Assassina , enriching it with stracciatella and chopped pistachios. Using quality Pugghia products, such as tomato puree , extra virgin olive oil and spicy chili pepper in oil , you will bring to your table a dish rich in flavor and tradition.
Ingredients
- 500g of spaghetti
- 200 g of fresh stracciatella
- 50 g of pistachio grains
- 2 x 400 g of Tomato Puree Pugghia
- 4 tablespoons of EVO Pugghia oil
- 1 teaspoon of Pugghia Hot Chili Pepper in Oil
- 2 cloves of garlic
- 10-12 cherry tomatoes
- Salt to taste
Preparation
1. Prepare the sauce
Start by heating the Pugghia EVO oil in a large, low pan. Add the garlic cloves and let them brown slightly, then remove them. Add the cherry tomatoes cut in half and let them wilt for a few minutes. Once the cherry tomatoes have softened, pour in the Pugghia tomato puree and cook the sauce over medium heat for about 10 minutes, until it has thickened slightly. Season with salt.
2. Cook the raw spaghetti directly in the tomato sauce
Now comes the special part of the recipe. The spaghetti is placed raw directly into the pan with the tomato sauce . Stir well to soak them in the sauce. Continue cooking them over medium-high heat, stirring occasionally, and let them burn slightly on the bottom of the pan. This "burning" is what makes the Spaghetti all'Assassina dish unique. Add hot water if necessary to cook the spaghetti without it sticking too much.
3. The finishing touch
Once the spaghetti is perfectly cooked and has that characteristic sear on the bottom of the pan, transfer it to plates. Add a generous amount of stracciatella to each portion and sprinkle with chopped pistachios. The contrast between the creaminess of the stracciatella, the crunchiness of the pistachios and the spiciness of the chili pepper will create an explosion of irresistible flavors.
Final advice
To complete this dish, we recommend pairing it with a red wine from Puglia, such as a Primitivo di Manduria or a Negroamaro , which will best enhance the intense flavours of Spaghetti all'Assassina Gourmet .
