- 200g of classic orecchiette Pugghia , the best pasta in Puglia
- 300g of yellow and red cherry tomatoes
- 300ml yellow datterini sauce
- 2 cloves of garlic
- 100g of stracciatella from Puglia
- Extra virgin olive oil from Puglia
- Pistachio grains to taste
- Fresh basil to taste
Procedure
- Preparation of cherry tomatoes: Cut the cherry tomatoes in half. Pour a drizzle of extra virgin olive oil from Puglia into a non-stick pan, add the crushed garlic cloves and fry briefly.
- Cooking the cherry tomatoes: Add the cherry tomatoes, the yellow datterini sauce, a few basil leaves and a pinch of salt. Leave to cook on a low flame with the lid on until the cherry tomatoes have softened.
- Cooking Puglian pasta: Cook the orecchiette, the traditional pasta from Puglia , in boiling salted water. Drain them al dente and transfer them to the pan with the tomato sauce. Stir well to blend the flavors.
- Plating: Serve the orecchiette adding the stracciatella, chopped pistachios, fresh basil and a drizzle of raw extra virgin olive oil from Puglia to enhance their aroma and nutritional properties.
