Orecchiette con crema di patate e mortadella

250 g Orecchiette
1 potato
1 slice of thick Mortadella
20 g Leek
black pepper
Extra virgin olive oil

Finely slice the leek, cut the potato into cubes and brown everything in a pan with extra virgin olive oil, adding salt and pepper to taste.
Cover with hot water and cook until soft. Blend and keep warm.

Brown the mortadella in a pan with a drop of oil and when it is crunchy remove half of it.

Plunge the orecchiette in abundant salted water and when they are cooked, stir them in the pan with the mortadella and the cream of potatoes.

Serve with crunchy mortadella and black pepper.
